Grandma Arrington's Fried Apples and Biscuits

My mother's father was originally from Virginia. He passed away when my mother was only two but she learned a lot about him through her mother and older sister. One of the things that they told her about him was that he liked fried chicken for breakfast. Another one of his favorites for breakfast was fried apples and biscuits. My mother would often make that for our breakfast… she never did make fried chicken!

Ingredients

Biscuits:

  • 2 cups flour sifted
  • 1/4 teaspoon baking soda
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/3 cup shortening
  • 3/4 cup buttermilk

Fried Apples:

  • 1 pounds bacon
  • 6 apples
  • sugar

Instructions

  • Sift together flour, baking powder, sugar and salt into bowl.
  • Cut in shortening until mixture resembles course meal or crumbs.
  • Make a hollow in flour-shortening mixture and stir in enough milk to make a soft-dough that leaves the sides of the bowl and sticks to the mixing fork.
  • Turn onto lightly floured surface and knead with heel of hand 15 times.
  • Roll 1/4" to 1/2" thick.
  • Cut with 2" cutter; lift cutouts to ungreased baking sheet.
  • Place close together for soft sides, 1" apart for crusty sides.
  • Bake in very hot oven (450 degrees) 10 to 12 minutes, or until golden brown.

Fried Apples:

  • Fry bacon until done; keep it warm while you fry the apples.
  • Pour off some of the bacon grease and use the rest for frying the apples.
  • Use a good cooking apple such as: Granny Smith, Jonathna, or Gala.
  • Cut into quarters, remove core and cut into 1/4" slices. (Do not peel.)
  • Fry in hot grease and cook until soft. Add sugar, to taste.
  • Serve over biscuits.
